What makes these cookies different from any other pistachio cookie? The pistachio butter! It’s not as hard to make as it sounds. You just blend pistachios in the food processor until they from a butter. I like blending them in a food processor instead of a high-speed blender. Anyone that owns a Vitamix knows what a pain it is to clean up after making nut butter.

I stole this idea from peanut butter cookies. A peanut butter cookie wouldn’t be peanut butter cookies with just chopped peanuts. The peanut butter helps give them the creamy texture. The same for pistachio cookies! The creamy pistachio butter helps evenly distribute the pistachio flavor, then adding the chopped pistachios gives the cookies a good crunch.

These cookies would make a great addition to your St. Patrick’s Day spread! Maybe you didn’t think of baking them for St. Patrick’s Day because they’re not overly green. But that’s my favorite part! I love that they’re naturally green.

If you really want them to be green, you can add a few drops of green food coloring to the dough. Or you could even use green colored white chocolate chips instead of milk chocolate chips.

So what else are you making for St. Patrick’s Day? My family always makes a corned beef and we cook mashed potatoes…with scallions and boiled eggs mixed in. Pistachio Butter Chocolate Chunk Cookies

Yield: makes 24 cookies |
Homemade pistachio butter mixed into cookie dough with chocolate chunks.
You'll Need...
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 2 tablespoons brown sugar
- 1 egg
- 1/2 teaspoon almond extract
- 1 cup 6 tablespoons flour
- 3/4 cup ground pistachios
- 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup chopped chocolate
- 1/2 cup chopped pistachios
Directions
- Line a baking sheet with parchment paper. Preheat oven to 350 degrees.
- In a large bowl, mix butter and both sugars for 2 minutes. Add egg and almond extract and mix for 1 minute.
- Add flour, ground pistachios, baking powder, and salt and mix until no flour streaks remain.
- Stir in chopped chocolate and chopped pistachios.
- Make cookies 10 - 11 minutes until edges are barely golden brown. Cool 5 minutes before removing from cookie sheet.
