Chocolate chip cookies or brownies?
Here I am, just saving you from making one more decision today. Soft cookies with chocolate chips stuffed with chocolate brownies. The cookie stays soft & chewy with an extra chocolaty center.

I’ve always seen these cookies at my local grocery store. I’ve admired them from a far, but have never bought them. I’m always too tempted by the chinese cookies -> these are also on my list to share with you soon!

The cookies at the grocery store don’t have chocolate chips and instead there’s a drizzle of chocolate. Personally, I enjoy the chunks of chocolate better.

These cookies will be thick and rich! To make them, you take a scoop of cookies dough, then put brownie batter on top, then top with more cookie dough. That’s a lot of cookie! For the bottom layer of cookie dough I use about 1/2 tablespoon. Then place about 1/4 to 1/2 tablespoon of brownie batter. Then top with a little less of 1/2 tablespoon of cookie dough. Roll it all together and you have one tasty cookie!

The only negative is you have to let the cookie dough and brownie batter chill out in the fridge. I let them chill overnight, but if you’re pressed for time you can wait as little as 4 hours. I know that seems like an unnecessary step, but you need to be able to roll the brownie batter into balls to fill the cookie dough.

Really, you can use any cookie dough and brownie batter recipe. But these work well together and there’s just a little bit of brownie batter left over. The leftover batter perfectly made 5 brownies in mini muffin tins, not mad about that!

Brownie Stuffed Chocolate Chip Cookies

Yield: makes about 28 cookies |

You'll Need...
- For cookie dough:
- 2 1/2 cup flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cornstarch
- 1 1/2 sticks butter
- 1 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1 egg yolk
- 2 teaspoons vanilla
- 1 1/2 cups chocolate chips
- For Brownie Batter:
- 1/2 cup flour
- 3 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
- 4 tablespoons butter
- 1/2 cup sugar
- 4 ounces chocolate chips
- 1 teaspoon vanilla
- 1 egg
Directions
- Make Cookie Dough: In a small bowl whisk the dry ingredients: flour, baking soda, salt, cornstarch.
- Beat butter and both sugars for 3 minutes. Add eggs and vanilla, mix for 1 minute. Mix in flour mixture. Stir in chocolate chips.
- Chill dough 4 hours or overnight.
- Make Brownie Batter: In a small bowl mix flour, cocoa powder, salt.
- In a saucepan melt butter, sugar, chocolate until everything is melted together. Let cool.
- Stir in vanilla and egg. Stir in flour mixture.
- Chill batter 4 hours or overnight.
- Make cookies: Scoop 1/2 tablespoon of cookie dough on parchment paper lined baking sheet. Top with about 1/4 to 1/2 tablespoon brownie batter. Finish with 1/2 tablespoon more cookie dough. Roll the dough in a ball encasing the brownie batter.
- While oven preheats, let formed cookie dough chill in fridge. Preheat oven to 350 degrees. Bake cookies 10 minutes, until barely golden. Let cool 3 minutes.
